Excerpt: Portuguese Timor was the name of East Timor when it was under Portuguese control. During this period, Portugal shared the island of Timor with the Netherlands East Indies, and later with Indonesia. The first Europeans to arrive in the region were Portuguese in 1515. Dominican friars established a presence on the island in 1556, and the territory was declared a Portuguese colony in 1702. Following a Lisbon-instigated decolonisation process in 1974, Indonesia invaded the territory in 1975 ending Portuguese rule. The invasion was never accepted by other countries, that is why Portuguese Timor existed officially until independence of Timor-Leste in 2002. Prior to the arrival of European colonial powers, the island of Timor was part of the trading networks that stretched between India and China and incorporating Maritime Southeast Asia. The island’s large stands of fragrant sandalwood were its main commodity. The first European powers to arrive in the area were the Portuguese in the early sixteenth century followed by the Dutch in the late sixteenth century. Both came in search of the fabled Spice Islands of Maluku. Portuguese first landed near modern Pante Macassar, and in 1556 a group of Dominican friars established the village of Lifau. Over the following three centuries, the Dutch would come to dominate the Indonesian archipelago with the exception of the eastern half of Timor, which would become Portuguese Timor. The Portuguese introduced maize as a food crop and coffee as an export crop. Timorese systems of tax and labour control were preserved, through which taxes were paid through their labour and a portion of the coffee and sandalwood crop. The following day was occupied in making preparations for the journey, purchasing a few of the most necessary articles of crockery, etc., and unpacking my canteen. This latter was a handsome teak box, and fitted up most neatly with plates, dishes, knives and forks, etc. But Mr Plant said that both the box and most of its contents were far too good to be exposed to the rough usage they would undergo on the journey; so I took out some of the things and repacked the box in its wooden case. Subsequent experience showed the wisdom of this advice, and that it was a mistake to use too expensive articles for such travelling as that in Madagascar, or to have to spend much time in getting out and putting in again everything in its proper corner. Upon reaching the halting-place after a fatiguing journey of several hours, it is a great convenience to get at one’s belongings with the least possible amount of exertion ; and when starting before sunrise in the mornings, it is not less pleasant to be able to dispense with an elaborate fitting of things into a canteen. By my friend’s advice, I therefore bought a three-legged iron pot for cooking fowls, some common plates, and a tin coffee-pot, which also served asa teapot when divested of its percolator. The low acid blend coupled with our low acid roasting process gives Manatee Gourmet Coffee that signature well balanced smooth taste. Manatee Gourmet Coffee is a wonderfully well balanced low acid coffee that is achieved by blending beans that are inherently low in acid content. We then roast the beans in such a way that acidity is minimized without affecting our great taste. Our inherently low acid green beans come from lower elevations in Brazil, Sumatra and Columbia. Every shipment is tested for the flavor profile to make sure it meets our specification. We blend our beans for a well balanced, smooth taste profile. The roasting process is timed to the second and temperature controlled to ensure that the beans have been roasted to their most flavorful potential with the lowest amount of acid. Our process avoids the bitterness and the stomach issues of many coffees on the market today.
