Best of Modern British Cookery $1.99 British food is going through something of a renaissance. At last we are taking a pride and an interest in our own cooking and our locally sourced ingredients. Much of the credit for this must go to Henrietta Green and her now famous Food Lovers’ Fairs as a result a legion of chefs are now championing British dishes with a modern twist. Chefs such as Fergus Henderson, Heston Blumenthal, Paul Heathcote, Martin Lam, Nigel Howarth and Rick Stein all make use of well sourced seasonal local produce and as a result of the quality of these ingredients have created dishes show case them to full advantage, plundering our culinary heritage as inspiration. Sarah Freeman – a cook who is proud rather than ashamed to be British – has skillfully collected together in her book, recipes culled from the new wave of Modern British chefs as well as creating a range of her own recipes in the same spirit. This is a really exciting collection of recipes which captures the present mood perfectly. The basis of the philosophy behind this style of cooking starts with the French word terroir. It means ’soil’ but in the context of food means more than just that, it means regionality and culture. So food from a particular area is an expression of the land because it is produced from local ingredients which are suited to the soil and climate of that region and are then transformed into an amazing array of culturally distinctive dishes. There can be no mistaking therefore the home of Baked Trout with Horseradish and Cream, Beetroot and Tomato Soup with Gin, Leek and Derby Sage Tart, Peter Gott’s Roast Gloucester Old Spot with Rhubarb and Apple Cheese, Scrag-end of Neck of Herdwick MuttonStewed with Shiraz or Rhubarb and Walnut Crumble with Ginger. This work is a bible of contemporary British cooking which was first published ten years ago, way ahead of its time then, but it has been revised and updated and is now destined for recognition as a classic.<p |

Bodum Santos Stovetop Vacuum Coffeemaker 34 Oz. $88.95 There is a good reason you can find a SANTOS coffeemaker in nearly every Scandinavian home, this vacuum brewing system has been fascinating coffee lovers for over sixty years. In the fifties, Peter Bodum, the father of today’s owner, Jorgen Bodum, imported an French vacuum coffee maker and sold it on the Danish Market. Although he found it both unsatisfactory and expensive, he was convinced that the vacuum brewing system was an excellent way to brew an exquisite cup of coffee. Thus, the first Bodum Santos vacuum coffee maker was born. In collaboration with Danish designer Kaas Klaeson, Peter Bodum developed what we know today as the SANTOS, establishing the credo: good design doesnt have to be expensive. The magic of the Santos holds both adults and children spellbound as they watch the boiling water rush from the bottom glass jug to the upper one where it gets mixed with freshly ground coffee. After a few minutes off the stovetop, a vacuum forms in the base which pulls rich black coffee through a filter and back into the bottom jug. This captivating process combines the ideal water temperature with just the right brewing time and makes for superb results. Whatever your preferred coffee and roast, the Santos vacuum system brings out the very best aromas in your cup. |

Bonterra 2005 Organically Grown Cabernet Sauvignon – Red Wine $18.49 Red Wine by Bonterra from North Coast, California. Syrah continues in this vintage as Bonterra’s unconventional blending grape for Cabernet Sauvignon, giving intriguing elements of spice and deep rich flavors sometimes not so attainable from the more traditional Merlot or Petite Sirah. Over the past seven years Bonterra has been privileged to work with Christian LeSommer, formerly of Chateau LaTour, to refine away the rough edges of their Cabernet to allow an elegant, near Old World styled wine to emerge. This Cabernet offers New World aromas of Bing cherry, currants and raspberry, with spicy notes of cedar and dried cranberry, with slight vanilla notes (French Vanilla, of course). In the glass you’ll find juicy red berry flavors, and a very approachable, rich and full mouthfeel with a lingering, thoughtful finish. Good structure, polished yet soft tannins promise an ever more pleasing wine to come, with lively acidity and subtle spice. This rich and flavorful wine will be a surprisingly good match with a broad array of dishes that reach far beyond Cabernet’s traditional pairing with roast meats. |

Cakebread Sauvignon Blanc 2010 $26.99 We harvest our Sauvignon Blanc grapes at night, when the vines are in full repose, to fully capture their fresh, concentrated varietal flavors, crisp acidity and ideal sugar-acid balance. Whole-cluster-pressing of the fruit immediately upon arrival at the winery maximizes varietal intensity while minimizing the extraction of astringent compounds from the skins. In 2010, we tank-fermented 88% of the juice while fermenting 12% in neutral oak barrels. Subsequently, 87% of the wine spent five months aging in neutral French oak barrels, which enriched its texture while optimizing varietal expression. Due to the coolness of the vintage, our 2010 Sauvignon Blanc is especially fresh, crisp and vibrant, offering bright honeydew melon, pink grapefruit, gooseberry and vanilla aromas and rich, mouthwatering, citrus, nectarine and melon flavors. An ideal aperitif wine, it also beautifully accompanies a wide and diverse range of foods, from shellfish and lighter seafood dishes to roast chicken, Caesar Salad and pasta primavera. |

Cooking With David Burke $40 David Burke is a new culinary star. And in this, his first cookbook, he presents the innovative and inventive cooking that has made him, in the words of one rival, the most copied chef in New York . The first non-Frenchman to win France’s highest cooking honor, and voted Chef of the Year by his peers in America, David Burke is a true original. Born in America, trained here and in France by such luminaries as Pierre Troisgros and Gaston Lenotre, he has developed a style all his own, emphasizing the twin goals of taste and beauty. The Burke style blends the principles of haute cuisine with French country cooking, American regional specialties, and ethnic touches. He has taken to new heights the originally European technique of building a dish, rather than displaying food flat upon a plate. He uses ingredients the way a child uses blocks, building, creating layers of food, achieving a remarkable melange of tastes, colors, and textures. In presenting this concept here for the home chef, he breaks down seemingly complex dishes into their component parts. He demonstrates that what looks intricate (and fabulous) can be easy to make. His classical training, combined with an artist’s eye and a rich imagination, provides the reader with a genuinely new way of looking at and preparing food. This is a soup-to-nuts cookbook, from stunning hors d’oeuvres such as Pastrami Salmon, and Parfait of Artichoke, Goat Cheese, and Marinated Vegetables, to dazzling desserts like Three-Layered Mousse Parfait, Red-Berry Sorbet, and Ginger Ice Cream. The heart of the book, though, lies in Burke’s signature main courses, which he builds into delicious dishes wonderful to look at and easily transformable into moreornate delights or simplified into convenient and lighter one-dish meals. Among them: Pan Roasted Monkfish with Green-Onion Sauce and Ziti and Eggplant Bouquet; Roast Cornish Hens with Saffron Potatoes and Chorizo Sausages; Sirloin Steak with Shiitake-Mushroom Hash and Pickled Vegetabl |

The authors also offer ideas for conversation starters and a collection of themes for get-togethers ranging from a Robbie Burns Scotch-tasting to a romantic midsummer night’s picnic. The book is capped off with an alcohol index that includes flavor notes, an alcohol content table, and suggested substitutions for almost every type of booze on the planet. |

Equal Exchange Organic Coffee, Whole Bean French Roast 10 oz $17.81 Dark and delicious with full body and a smooth finishCertified Organic by Oregon Tilth A product of Equal ExchangeFarmers As Equals Equal Exchange is much more to us than just a buyer of our coffee. We see you as a partner who treats farmers as equals. You share our commitment to growers and to the land, and are helping us create a better future. Pedro Haslam, General Manager CECOCAFEN Cooperative, NicaraguaOur QualityEqual Exchange, a worker-owned fair trade company, has been offering gourmet, sustainably grown coffees since 1986. Because of our close relationships with farmers, we get their best beans. We then roast our coffees in small batches to bring out their best characteristics. But our commitment to quality extends beyond the beans to include the quality of life of the farmers with whom we work, their communities and the environment. We hope you will enjoy this coffee brought to you with pride by Equal Exchange and our small farmer partners in Latin America, Africa and Asia. Our CommitmentTo pay a fair price to the farmer To trade directly with democratic cooperatives To offer pre-harvest credit to aid farmers throughout their growing season To develop long-term trade partnerships To support sustainable and shad grown farming practices We are committed to these principles on 100% of our coffees and teas. Fair Trade at WorkMuch of the world’s coffee is grown by small farmers, purchases at negligible prices by middlemen, and then bought and sold on a commodities market thousands of miles away. Equal Exchange provides an alternative by working directly with small farmer cooperatives, helping to build pride, independence and community empowerment. With the added income and stability provided by this relationship, farmers can make improvements in their own lives. Women’s leadership training in Nicaragua, community stores in Colombia, health clinics in Mexico, small business development in Tanzania – these are some of the most vivid examples of the benefits of fa |

Sugar, we may conclude, and the West Indies were as inseparably associated with each other in the good woman’s mind as roast pigs were with babies in Mrs Nickleby’s. And yet I dare say a good many other ladies—no insinuations—would be puzzled, if suddenly called upon to put down their finger exactly where it lies on the map. As I am going to give a brief sketch of its history, I had best start with its whereabouts. For the edification, then, of all ladies let me at once state that we, the children of Mauritius, slumber in a cradle rocked by the waves of the Indian Ocean, just within the tropics. The cradle, probably of volcanic formation, is shaped like a pear. Its greatest length is 39 miles, its greatest breadth about 33; south latitude 20, east longitude 57. Somewhere about 700 square miles form the area, so that, in fact, it is not much bigger than several of our English counties. Those who come and see us, and choose to do so via the Cape of Good Hope, have to traverse upwards of 11,000 miles. If by the Mediterranean, the overland route, and Aden, about 7000. Don Pedro is reported to have named it ‘Itha do Cernos,’ Island of Swans; if so, the Don’s swans, like many other people’s, were geese, for the feathered creature which suggested the name to Don Pedro, peculiar, it is believed, to this part of the worlfl, which the French have called ‘ Dronte’ and we ‘ |

All that has just been said of lamb will apply to a quarter of kid ; the most esteemed parts of which are slices of the legs. Pork furnishes but few roast joints for distinguished tables. However, if the loin be good, it may be carved as veal. The leg, or ham part offers a good remove, especially from Easter to Whitsuntide, in France ; it is usually served cold, and garnished: cut it up in vertical slices, beginning with the end opposite the knuckle-bone, which take in your left hand, and pass the knife only as far as the middle of the fleshy part; then cut horizontally along the bottom of all these slices, to separate them; in this manner, every piece offers readily both fat and lean. As this joint will be served again, leave the first cut to be placed at where you had finished cutting, and cover the whole with the rind, which keeps it moist. The Sucking Pig, towards the end of the summer, is a delicate roast dish; it should be cut open soon as placed on table, for it should be eaten very hot, else the rind or crackling will lose its crispness. To carve it conveniently, you should have a knife with a fine blade and well sharpened ; commence by separating the head from the body; then take off the skin from the back, next that of the sides, the thighs, and the belly, and cut it in square pieces, taking care to leave a little meat on the rind; for that, including the head, is most esteemed. What remains can only be eaten in rag6ut with a sauce, which relieves the savour of it. Some persons serve it en UaiujucUe. WILD BOAR. Besides the fillet and the sides, the Wild Boar offers but little for our tables, except the head, which is eaten in entremets, cold; the bones being first removed, and it bei |

L’Ecole 41 Merlot 2007 $24.99 Winemaker’s Notes: Rich with pretty aromatic aromas of nutmeg, clove and spice, this dark and brooding Merlot shows black cherry, blackberry, and earthy dark fruit flavors encased in a peppery, cocoa, toasty finish. Today, the winery is owned and operated by their daughter and son-in-law, Megan and Martin Clubb. Built in 1915, the schoolhouse is located in historic Frenchtown, a small community just west of Walla Walla, Washington. Frenchtown derived its name from the many French-Canadians who settled the valley during the early 1800s. Legend has it, these men of French descent were raising grapes and producing wine. By the 1860s, nurseries, vineyards and winemaking had become a part of the regions’ growing economy. The name – L’Ecole N 41 French for the school located in district number 41 – was c |
