This is what I choose. Costa Rican Tilapia INGREDIENTS: 3 tablespoons fresh lime juice 3 tablespoons olive oil, 4 tablespoons tablespoons finely chopped fresh coriander divided or parsley, divided 4 tablespoons tsp minced garlic, divided 1-1/2 teaspoon salt kosher, divided 1 / 4 c. teaspoon sugar 6 tilapia fillets, about 5 ounces / 4 cup long-grain 3 rice 1 cup chopped onions 2 oranges, peeled, seeded, coarsely chopped 1 can (28 ounces) diced tomatoes, undrained 1 can (15 ounces) pinto or black beans, drained, rinsed 1 c. tsp dried oregano leaves 1 / 2 teaspoon freshly ground black pepper 1 / 4 c. teaspoon cayenne pepper Method: Marinade: Mix lime juice, 1 tablespoon of olive oil, 2 tablespoons cilantro, 1 tablespoon tsp garlic 1 / 2 teaspoon of salt and sugar. Add tilapia and marinate 15 minutes, turning once. Bean and rice mixtures: Cook rice and keep warm. Preheat oven to 400 degrees. In large or saucepan, heat 2 tablespoons of olive oil a skillet over medium heat. Add garlic and remaining onions and sauté until translucent. Add 2 tablespoons cilantro, oranges, tomatoes, beans, oregano, 1 teaspoon salt, pepper and cayenne pepper. Bake uncovered until hot, stirring occasionally. Transfer hot rice in a dish baking. Add bean mixture and mix. Overlap tilapia fillets on top and add the marinade over the fillets. Cook until the tilapia begins flake. —————— ——————————– —————— ————

A Friend Laughs $15.98 Many of us dream of changing our life but few have done something as bizarre and drastic as moving to the Costa Rican jungle. In 2004, Jo and Crispin Freeman sold their London flat and did just that; with their six month old baby in tow. They purchased 165 acres on the southern Pacific coast near Pavones: sleepy surfer town and brainchild of an infamous convicted drug smuggler.Crispin soon forgets his lawyer background and is blissfully happy zipping around the jungle on his quad bike – crashing occasionally – with his faithful machete by his side. He becomes addicted to buying land, befriends the aptly named Crazy Lenny and the drug smuggler’s right-hand man and is incapable of saying ‘No’ when locals ask him for a loan.Sensible Jo doesn’t take to her alien surroundings quite so easily. The wildlife terrifies her (is that a snake under my baby’s play-mat?!), the locals bemuse her (you can’t really think your daughter’s birthmark is due to a lunar eclipse, can you?!) and the fact that it seems their new house will never ever be finished drives her mad (although having the good-looking builder around is quite nice). After horribly losing a horse to tetanus, unknowingly being involved in a wood smuggling operation, and having a disastrous time trying to get the new house ready for imminently arriving friends; Jo eventually realises that maybe the grass is getting greener but she has been too wrapped up in all of the disasters befalling them to notice.‘A Friend Laughs’ is the funny and sobering true story of what happened when a young family followed their dream. |

In addition, interactional elements among stakeholders are essential, particularly among community members. Extra-local tourism development was found to be less beneficial to the local community. The Costa Rican Civil War was the bloodiest event in 20th century Costa Rican history. It lasted for 44 days (from March 12 to April 24, 1948), during which approximately 2,000 people are believed to have died. The conflict was precipitated by the vote of the Costa Rican Legislature, dominated by pro-government representatives, to annul the results of the presidential election of 1948, alleging that the triumph of opposition candidate Otilio Ulate had been achieved by fraud. This caused a rebel army under commander José Figueres to rise up against the government of President Teodoro Picado, which it quickly defeated. After the war, Figueres ruled for a year and a half as head of a provisional government junta which abolished the military and oversaw the election of the Assembly that produced the new Costa Rican Constitution of 1949. The junta then stepped down and handed power to Ulate. Costa Rica has not experienced any significant political violence since then. |

Excerpt: Elizabeth Odio Benito (born 15 September 1939) is a Vice-President of the International Criminal Court. She previously served as a judge on the International Criminal Tribunal for the Former Yugoslavia, and in her home country of Costa Rica was twice appointed Justice Minister, later becoming Vice-President of the Republic. Her background is as an academic lawyer, specialising in the administration of justice and human rights, in particular the rights of women. Although born in Puntarenas, the first child of Emiliano Odio Madrigal and Esperanza Benito Ibañez, most of her early life was spent in San José, where she attended the Colegio Superior de Señoritas. The law was something of a tradition on her father’s side of the family; Odio Benito was particularly encouraged by her lawyer uncle, Ulises Odio Santos, to study that subject. She graduated with a master’s degree from the University of Costa Rica in 1964, where she remained for much of her academic career, rising to a full professorship in 1986 and Vice-President for Academic Affairs in 1988. During this period, she began to work in the field of gender studies, with an emphasis on crimes committed against women. Meanwhile, Odio Benito was becoming increasingly involved in the administration of justice.
