Experimenting with Pesto?

A few years ago, I became a huge pesto enthusiast. I make my own basil pesto from time to time. It’s very simple, but I put a lot of attention into the minor details. I toast my walnuts, roast my garlic (and a generally only use 2-3 cloves in a larger batch), and use the oil from roasting the garlic in the pesto. It ends up having a very summery, almost vegetable type taste, and I generally don’t add the cheese until the pesto is served.

However, I want to branch out and try doing a cilantro pesto. Any advice or recipes. I also recently discovered how delicious pine nuts are. Can those be toasted in the oven too? Does it enhance the flavor of the pine nuts? Can I add a little lime juice? Should I add anything like honey to add a hint of sweetness? What would cilantro pesto go best with?
