This is what I choose. Costa Rican Tilapia INGREDIENTS: 3 tablespoons fresh lime juice 3 tablespoons olive oil, 4 tablespoons tablespoons finely chopped fresh coriander divided or parsley, divided 4 tablespoons tsp minced garlic, divided 1-1/2 teaspoon salt kosher, divided 1 / 4 c. teaspoon sugar 6 tilapia fillets, about 5 ounces / 4 cup long-grain 3 rice 1 cup chopped onions 2 oranges, peeled, seeded, coarsely chopped 1 can (28 ounces) diced tomatoes, undrained 1 can (15 ounces) pinto or black beans, drained, rinsed 1 c. tsp dried oregano leaves 1 / 2 teaspoon freshly ground black pepper 1 / 4 c. teaspoon cayenne pepper Method: Marinade: Mix lime juice, 1 tablespoon of olive oil, 2 tablespoons cilantro, 1 tablespoon tsp garlic 1 / 2 teaspoon of salt and sugar. Add tilapia and marinate 15 minutes, turning once. Bean and rice mixtures: Cook rice and keep warm. Preheat oven to 400 degrees. In large or saucepan, heat 2 tablespoons of olive oil a skillet over medium heat. Add garlic and remaining onions and sauté until translucent. Add 2 tablespoons cilantro, oranges, tomatoes, beans, oregano, 1 teaspoon salt, pepper and cayenne pepper. Bake uncovered until hot, stirring occasionally. Transfer hot rice in a dish baking. Add bean mixture and mix. Overlap tilapia fillets on top and add the marinade over the fillets. Cook until the tilapia begins flake. —————— ——————————– —————— ————

Excerpt: The Turquoise-browed Motmot (Eumomota superciliosa) also called Torogoz by the inhabitants of El Salvador and Guardabarranco in Nicaragua; is a colourful, medium-sized bird of the motmot family, Momotidae. It inhabits Central America from south-east Mexico (mostly the Yucatán Peninsula), to Costa Rica, where it is common and not considered threatened. It lives in fairly open habitats such as forest edge, gallery forest and scrubland. It is more conspicuous than other motmots, often perching in the open on wires and fences. From these perches it scans for prey, such as insects and small reptiles. White eggs (3-6) are laid in a long tunnel nest in an earth bank or sometimes in a quarry or fresh-water well. It has a mostly green body with a rufous back and belly. There is a bright blue stripe above the eye and a blue-bordered black patch on the throat. The flight feathers and upperside of the tail are blue. The tips of the tail feathers are shaped like rackets and the bare feather shafts are longer than in other motmots. Although it is often said that motmots pluck the barbs off their tail to create the racketed shape, this is not true; the barbs are weakly attached and fall off due to abrasion with substrates and with routine preening.
